My New Dinner Party Hero!


Ever since I tasted this dish when I accidently ordered it as a starter when over in Galway and The West restaurant last week, I have been dying to try and make myself. And now, having re-created it mostly from my memory and with just a couple of little Google searches to make sure I was on the right track; Ta-Da; Chorizo, Baby Potato and Red Onion Salad! It. Is. YUM.

This portion will serve approximately 4 people as a starter/side dish:

16-20 baby potatoes (Organic if you can get them)
300g of chorizo. (Look for the best quality you can find)
2 red onions, finely sliced.
Juice of 1/2 lemon.
A drop of Balsamico vinegar
Rocket Salad
A good pinch of sea salt and freshly ground black pepper.

How To:

Put potatoes in pot. Place over a high heat and bring to the boil, reduce the heat and simmer for about 10-12 minutes. Remove from the heat and drain.

Place a large frying pan over and medium high heat and add the chorizo and a drop of olive oil.

Fry the chorizo slices for 5-6 minutes until they are really red and crispy. Remove the pan from the heat and squeeze over the juice of half a lemon and a drop of Balsamico vinegar.

Combine the chorizo and lemon juices. Add the red onion to the pan and stir through.

Finally; chop the potatoes into bitesize pieces and add to the pan gently tossing so that all the ingredients are combined.

Season with sea salt and black pepper, put in a bowl and ad the rocket leaves. Serve. Eat. Enjoy!
