Homemade Apricot Flapjacks...
... are just perfect as a little post-work pick-me up! YUM!
INGREDIENTS:
50 g butter or margarine
5 tbsp demerara sugar
4 tbsp golden syrup (I use organic maple syrup, as it tastes yummy!)
200 g organic porridge oats (spelt is good)
handful of finely chopped organic dried apricots
HOW TO:
1. Preheat the oven to 190°C/gas 5. Grease and line a shallow 17x26cm baking tin.
2. Put the butter, sugar and maple syrup in a saucepan and melt over medium-low heat.
3. Stir in the oats and chopped apricots,
4. Spoon the mixture into the prepared tin. Bake in the preheated oven for 25 minutes.
5. Remove from the oven, and cut into slices while still warm.
When cool, put in airtight container. Will last for about a week. Enjoy with a frothy latte. YUM!
