Breakfast Bliss


Sunday mornings were just made for long lazy breakfasts. And these healthy muffins are just perfect with a glass of freshly squeezed orange juice.

Banana Breakfast Muffins:


INGREDIENTS:

225g/8oz S/R Flour
125g/4oz Marg
125g/4oz Brown Sugar
1 egg
1/2tsp baking powder
300ml/1/2pint milk
1 banana(diced)

METHOD:

1. Preheat the oven to 180C/Gas 4. Grease a 12 muffin tin or line each with a muffin case
2. Cream the marg and sugar together. Beat in the egg.
3. Add flour, baking powder and milk. Gently stir until all ingredients are combined. Don't over mix.
4. Stir in diced banana
5. Spoon into prepared tin
6. Bake for 15 to 20 minutes
7. Cool on a wire tray.

Then tuck in and enjoy! YUM!
