Homemade Granola...
... with vanilla soy yoghurt is the perfect weekend breakfast. Oh- and some Starbicks coffee on my french press too! Granola is easy peasy to make- and is A LOT healthier than buying some- as store-bought granola tends to be laden with sugar or honey or syrup of some kind.
I usually make a large batch, it will stay yummy in an air-tight container for several weeks.
Here’s what you will need…
5 dl old fashioned rolled oats (if you can get organic, get it)
2,5 dl shredded coconut (unsweetened is better)
2,5 dl sliced almonds
1,5 dl chopped walnuts
1,5 dlp chopped pecans
2-3 tablespoons coconut oil (extra virgin and organic)
2-3 tablespoons agave nectar (or any good honey)
1-2 teaspoons of cinnamon (optional)
1-2 teaspoons vanilla extract (optional)
Preheat the oven to 200 degrees.
Toss the oats, coconut, almonds, walnuts, pecans and cinnamon together in a bowl. In a smaller bowl whisk together the oil, honey and vanilla extract. Pour the mixture over the oats and nuts and mix well. You do not want the mixture to be soaked. You just want it coated and slightly moist. I don’t even use all this oil/honey mixture if it starts looking too wet and clumpy. Be clever!
Pour into a large sheet pan. Bake until everything turns a nice golden brown color, roughly 20-25 minutes, stirring once or twice during cooking. You really must watch it, it goes from cooked just right to burnt VERY quickly. So- I repeat; don't leave the oven! Allow to cool completely before storing. And voilá; yummy lovely granola that will totally impress your breakfast guests!
