Healthy Breakfast Waffles..



... is perfect for a family celebration of Norwegian Father's Day. Quick and easy to make, these waffles taste AMAZING served with either fresh berries (like we did, with blueberries that were picked and frozen fresh earlier this autumn) or whipped cream, or, like the Americans do it, with maple syrup or golden yummy honey. Either way, these are a treat, so will most definitively be made again!

Yummy Healthy Breakfast Waffles

4 eggs (organic, free range if you have)
1-2 teaspoons of honey (again, organic)
a pinch of salt
2 dl organic oats
ca 200 g buckwheat flour (or any whole wheat range you have available)
1 teaspoon baking soda
1/2 dl coconut oil (organic, extra virgin)
2 dl cottage cheese
ca 3 dl yoghurt (soy or dairy)

Mix all the ingredients till you get a smooth batter and let it rest for 20 minutes.

Cook in traditional waffle maker (or fry on the pan if you lack this, and these will become pancakes instead!)

Then; sprinkle with berries, tuck in and ENJOY!
